lentil & portobello burger
This is a really yummy although somewhat involved recipe for veggie burgers (probably easier if you have a food processor!)
- 3-4 carrots
- 1 bunch green onion
- 1red pepper
- 1 small yellow onion
- 1 cup lentils, cooked
- 1 tomato
Chop up all the veggies…
and mix them in with the lentils. Then add an egg and form patties. Fry these babies up and use them for all your burger needs!
In the oven, throw in a whole portabello mushroom with some butter on top and a bit of balsamic vinegar in the center. Bake for 10-15 minutes until tender.
Finally, assemble your burger as you will! No matter what you have in hand, it’s sure to come out really tasty.
